How long do you need in Pompeii?
The park recommends at least 2 to 3 hours. I'd allow four for my route from the Amphitheatre to the Forum. Keep a full day if you also want the Villa of the Mysteries. Pompeii covers 44 hectares, and you can't leave and come back on the same ticket. Pick the hours first, then the gate: it decides what you see.

Two hours, four hours, or the day?
The Forum and the houses around it
From Porta Marina: the Forum, the Temple of Jupiter, the Sanctuary of Apollo, the Basilica, the Stabian Baths. My route uses parts of the park's Path 2, which itself starts at the Stabian Baths. It's my suggested central route; check a guided tour's own itinerary before booking.
Amphitheatre to Forum, both ends
What I'd doEnter at Piazza Anfiteatro, the park's suggested gate: the Amphitheatre, the Palaestra with the casts exhibition, the Garden of the Fugitives, then Via dell'Abbondanza to the Forum and out at Porta Marina. Parts of the park's Paths 1 and 2, in its order.
A full day, with the Villa of the Mysteries
Paths 1 to 3: the two above, then the House of the Vettii, the necropolis and the villa outside the walls. The villa is on the €25 ticket, and its gate, Porta Ercolano, closes at 17:30 in summer.

Is 2 hours in Pompeii enough?
For the Forum and the houses around it, yes. My route uses parts of the park's Path 2: the Forum, the baths, the Basilica, a house or two. You'll see Pompeii as a town.
What two hours won't give you: the Amphitheatre and the casts at the eastern end, and the Villa of the Mysteries outside the walls. They sit at the two far ends of a site 44 hectares across. I'd allow four hours for my Amphitheatre-to-Forum route, and a full day if you also want the villa.
The park itself says 2 to 3 hours minimum. Take the afternoon period if you're choosing a slot: entering at 15:30 in summer leaves 3.5 hours before the 19:00 closing.
